St. John's nut (black walnuts)
Green nuts have been pickled or made into liqueur since ancient times. In the Middle Ages, they were picked on St John's Day, hence the name
‘St John's nuts’. To make the unripe nuts edible, they have to be pickled for a long period of time. Similar to the truffle, the black nut is considered a culinary treasure.
A very exclusive, small snack or appetiser component. Truffles were yesterday, black walnuts are today!
