Alpine Minestra
Minestra refers to a soup with a garnish, something like a stew. Every Italian region, every housewife has her own recipe, but it always contains seasonal vegetables and rice or pasta. Its origins are disputed; the Ligurians claim that it is a typical seafaring dish, while others attribute it to cucina povera (poor people's cuisine), as it uses leftovers. Our minestrone mix contains a selection of root and cabbage vegetables from the neighbouring Erner organic garden. Worth mentioning is the inclusion of spring cabbage, a frost-hardy type of cabbage that was already favoured by the Romans and has experienced a revival in recent years.
