Groundhog mince
The Alpine marmot is a game animal in Switzerland and is also known as the ‘Mungg’. It lives on the deep mountain pastures and meadows between 900 and 2,500 metres above sea level and prefers sunny south-facing slopes. These stately rodents make life difficult for the inhabitants of the Alps with their intensive tunnelling and have been on their menu for centuries. The wild, earthy flavour of the defatted meat gives the minced meat a distinctive, tangy note.
