In many cultures, the evergreen fir tree symbolises birth and resurrection. Since the late Middle Ages, its light green tips - also known as May green - have been collected in spring and usually processed into syrup. On the one hand, because of its unmistakable flavour and as a cheap alternative to the relatively expensive sweeteners of the time, such as mineral sugar and honey.
