Ibex house sausage with rowan berries

Hauswurst - an air-dried, unsmoked raw sausage - is the Valais version of Landjäger. According to an old custom, Hauswurst was prepared for the Berchtoldstag civic drink and distributed to the inhabitants. Formerly a practical snack when working in the fields and vineyards, the dry sausage is now very popular with hikers. The wild, spicy taste of ibex and the bitter-sweet aroma of rowan berries give the sausage an unusual, unique flavor.

Ingredients: 35% ibex*, 25% venison*, 30% pork*, red wine, wild rowanberries*, Marc de Dôle, salt, nitrite, spices (* Ingredients LP Binntal)
